1. Calumet Fisheries- one of the most recognized smokehouses in Chicago
This little white smoke shack serves house-smoked fish, fried seafood platters & a smattering of sides! The fish is cut into steaks, threaded with string, and hung from a smoking rack overnight. Wood fires are built in the bottom of the smokehouse and the fish are cooked with the doors open. When the cooking is complete, the doors are closed and the fish are smoked. The smaller fish are smoked by tacking to a plank. The picks are usually eaten out of paper bags which is indeed a quintessential part of the experience!
